I'm trying to add my own license Clause for the repositories, but I can't seem to find the magical add button.

You can add a custom license by creating a LICENSE (or LICENSE.txt) file in your repository and pasting your custom text there. The GitHub UI helper only offers common templates, but custom text is allowed.
